Model Matematika Kadar Air Keseimbangan Jagung Muda Instan Var. Pulut, Motor dan Manis

Abstracts: The objective of this research was to determine a suitable model of isotherm sorption for Waxy, Flint and Sweet Instant Young Corn Kernel (IYC). The method use was the water sorption isotherm method by adsorption at temperature 30oC and range of water activity (aw) 0.07- 0.97. The models correlated were the Hasley, Chen-Clayton Henderson, Caurie and Oswin. The result showed that the mathematic
model of Oswin can be described more pricisely phenomenal isotherm sorption for Waxy IYC and Flint IYC. The model of Oswin had given result more pricisely compared with the experimental data. The model of Oswin can be used for prediction of the isotherm sorption for Waxy and Flint IYC. Eventhough, the selected model could not be applied on the Sweet IYC because there was no phenomenal isotherm sorption model.
